Founded on a passion for Maine’s working waterfront and a dedication to sustainable aquaculture, Bombazine Oyster Company grows premium oysters in the pristine waters of the New Meadows River in Brunswick, Maine. As a small, family owned farm, we balance tradition with innovation, producing oysters that showcase the rich, briny character of Maine’s coast.
We raise our oysters using surface cages, a method that keeps them close to the nutrient-rich water column and allows for regular air drying to keep our oysters clean. Throughout their two year lifespan these oysters never touch the river’s silty bottom. We also tumble our oysters to their shells and encourage deep cups, making them a standout on any raw bar.
The New Meadows River is technically an embayment and has very little freshwater influence, which gives our oysters their powerful brine. Our farm, nestled next to Bombazine Island, sees some of the highest phytoplankton counts in the entire state. This is due to the river’s unique rich glacial sediment and varied topography which results in high primary productivity.
Bombazine Oysters are a high-salinity oyster with a bright, grassy start, followed by a subtle sweetness from the adductor, and a dry, crisp finish— making them truly unique.
Their flavor profile is layered:
• Salinity first – a bold, clean brine that speaks to their New Meadows River origin.
• Grassiness & brightness – notes of hay and algae brine, adding complexity and a fresh, oceanic character.
