Tasting 1
NV Hillinger Secco Sparkling Rose, Burgenland, Austria - 100% Pinot Noir
Juicy and fruity with a hint of strawberry sweetness, offset by nice acidity, minerality, and a pretty perlage of bubbles

Oyster Schnitzel breaded and pan fried jumbo oyster served with red cabbage slaw

 

Tasting 2
2022 Mittelbach, T Rose, Kemptal, Austria
A perfectly dry and bright rose. Berries wrapped in lime zest, with zippy, long, crisp finish

Blue Crostini’s - Cashel Blue on baguette slices, grilled spring onion, honey, thyme

 

Tasting 3
2021 Ruttenstock Gruner Veltliner, Niederosterreich, Austria
heady grapefruit and lemon notes, and snappy body, but with white pepper nuance

Scallops - Grilled Maine scallops with smoked tomato beurre blanc

 

Tasting 4

Lovely balance between fruit and savory notes; raspberries, pomegranate and red licorice
